Broken Eggs

This is probably one of my favourites! Hearty fried egg and potatos that can be found everywhere in Spain and now in your kitchen! It's often server with Jamon Serrano but some people like it with chorizo as well. The key to have the best one is leave the eggs runny. You can eat it for breakfast, lunc or dinner, you pick!

Ingredients:
  • 4-5 big potatoes
  • 3-4 eggs
  • Paprika fakes or red pepper flakes.
  • Olive oil
  • Salt
  • Jamon Serrano or Chozizo. If you want to make a vegetarian version you can add fried green peppers instead.
Steps:
  1. Chop the potatoes in slices.
  2. Put a good amount of olive oil on the pot.
  3. Fry the potatoes
  4. Dress the potatoes with salt, pepper or paprika flakes.
  5. Cut the jamon or chorizo in small pieces.
  6. Fry the eggs and put them on top of the potatotes.
  7. Dress the eggs.
  8. Put the Jamon/Chorizo on top of it.
  9. Break them! and Enjoy.
